1 5-oz round Jasper Hill Farm’s Harbison cheese
1 tsp. fresh thyme leaves
1-2 tbsp. local honey
¼ cup walnuts
Preheat the oven to 350 degrees. Carefully remove the top of the rind of the cheese just above the bark to expose the interior of the cheese. Place cheese in an oven-proof dish, just large enough to hold it. Bake for 8-10 minutes until the cheese is just heated through and barely bubbling. Sprinkle thyme and walnuts on cheese and drizzle with the honey or top with pieces of honeycomb.
Serve with cranberry walnut bread, apricot brandy crisps, or Belgian endive.
