2 ½ lbs. collard greens, cleaned and chopped
2 cups sliced onion
2 qts. water
1 cup bacon, sliced or whole
1 clove garlic, minced
2 Tbs. cider vinegar
1/3 cup brown sugar
Dash hot sauce
Salt, to taste
Pepper, to taste
Combine all ingredients in a large pot. Bring to a boil, then simmer uncovered until the greens are tender, about two hours. Add water as needed. Season well with salt and pepper.
