Bacon Jam

Rate This Recipe: 

1 lb. smoked bacon, diced
1 large yellow onion, diced
4 garlic cloves, chopped
¼ cup cider vinegar
¾ cup brewed coffee
¼  cup brown sugar
¼ cup maple syrup
¼ cup bourbon
1-2 chipotles, chopped
½ teaspoon cumin
Ground black pepper to taste


In a medium skillet, render bacon until brown but not crispy. Transfer with a slotted spoon to a paper towel-lined plate. Pour off excess bacon fat from the skillet. Saute onions and garlic over medium-low heat until softened and translucent. Add remaining ingredients and bacon, and cook on medium heat until some moisture has evaporated.
Blend mixture in a food processor until it reaches a jammy consistency. It will not be smooth.
